Ingredients for legumes recipe
  • ½ cup chickpeas (boiled)
  • ½ cup green lentils (boiled)
  • Half a glass of black-eyed peas (boiled)
  • ½ cup of dried beans (boiled)
  • 1 onion
  • 2 tomatoes
  • 2 cloves of garlic
  • Half a teaspoon of olive oil
  • 1 tablespoon of tomato paste
  • 1 tablespoon of chili paste
  • Hot water
  • Salt
  • Black pepper
  • chopped parsley
How to make legumes

Chop the onion and fry in olive oil until golden brown. Add the grated tomatoes, garlic and tomato paste and cook on high heat for a few minutes. Add boiled lentils, black-eyed peas, chickpeas and beans and cook for 2 minutes. Add salt, pepper and enough hot water to cover. Bake for 25-30 minutes and transfer to a serving plate. Serve hot or warm garnished with parsley.
