Ingredients for Quinoa Chicken Recipe

  • 1 cup of quinoa
  • 250g chicken breast meat
  • 5-6 shallot onions
  • 5-6 sprigs of parsley
  • 1 tablespoon of olive oil
  • Salt

For the above

  • 200 g filet pistachios

How to Make Quinoa Chicken

  • Take olive oil and shallots in a saucepan. Saute the onions on medium heat until they turn pink. Add the quinoa and continue sautéing for another 5 minutes.
  • Chop the chicken breast into long strips and add to the pot. Add enough water to cover it and let it boil. After boiling, close the lid of the pot, cook for 25-30 minutes until the quinoa and chicken meat are tender.
  • After cooking, add salt, mix and remove from the stove. Transfer it to a serving plate, garnish it with pistachios and serve.
