Ingredients for Vegan Rice Recipe
- 5 medium eggplants
- 100 g caramelized soy mince
- 150 ml of hot water
- 100 ml olive oil (for the mortar)
- 100 ml olive oil (for frying eggplants)
- 2 medium onions
- Quarter bunch of parsley
- 2 tablespoons of tomato paste
- 1 teaspoon of chili paste
- 2 cloves of garlic
- 1-2 teaspoons of cumin
- 1 teaspoon of black pepper
- Salt
For the above:
- Tomatoes and green peppers
How to Make Vegan Shrimp?
- Take the soy mince in a bowl and add hot water to it and let it rest for 15 minutes.
- Squeeze the soya mince that has swelled in water and keep it aside.
- Finely chop the onions and add olive oil to the pan. Fry the onions in oil.
- Add the tomato paste to the onions starting to turn pink and fry for 3-4 more minutes.
- Add the soy mince to the onion mortar and fry for 10-15 minutes on average.
- In the last 5 minutes of roasting, add finely chopped garlic and parsley.
- After adding your favorite spices, close the bottom of the mortar.
- Cut off the stems of the eggplants and peel them from beginning to end, leaving 1 strip on both sides.
- Soak the eggplants in salted water for 15 minutes. This will remove the bitterness.
- Then dry the eggplants completely with a paper towel. Heat the olive oil in a pan.
- Add the eggplants to the hot oil and cook. Turn the eggplants over to the other side as they are browned.
- Eggplants are ready when they are soft. Remove the baking dish and cut open the middle of the eggplants.
- Place the cut aubergines in the baking dish. Fill the stuffing evenly into the eggplants. Add sliced tomatoes and green peppers on top.
- Put only half a cup of water at the bottom of the tray. Fry the eggplants for about 15 minutes in a preheated 200 degree oven. Enjoy your meal.
