Ingredients for Vegan Menemen Recipe

  • 1 teaspoon of turmeric
  • 4 tablespoons of boiled dried chickpeas or 4-inch thick tofu
  • 1 tablespoon of tomato paste
  • 6 tablespoons of freshly chopped tomatoes
  • 1 green pepper
  • 1 small onion
  • 4 tablespoons chopped mushrooms
  • 1/2 teaspoon cumin
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon paprika
  • 4 sprigs of finely chopped parsley (after cooking)

How to Make Vegan Menemen

  • First, finely chop the onions and boil water on the stove.
  • Take the boiling water in the pan and add the tomato paste and chopped onions.
  • Saute the onions until they turn pink.
  • Meanwhile, finely chop the tomatoes. Chop the mushrooms and peppers as well.
  • Add tomatoes, mushrooms and peppers to the sautéed onions, respectively. Then add the spices except turmeric.
  • Mix the ingredients well. Then add turmeric. Crush the tofu in your hand and sprinkle it into the menemen.
  • Cover the pan and cook on low heat for 20 minutes. Turn off the stove at the end of the cooking process.
  • Finely chop the parsley and add it to the menemen. Enjoy your meal.
